I had never seen a picture of Alfred as an older person.  He looks so much like Edward VII.

Yes, he did once his drinking and smoking caught up to him and helped to sadly erode his youthful good looks.

The portrait hangs in Coburg, I believe, and was painted once he had become Duke in 1893.

I believe I read someone that in his youth Alfred was considered the best looking of all Queen Victoria's sons.

After Alfred became Duke of Saxe-Couburg-Gotha what was his style and title?

Was he:

HRH The Duke of Saxe-Couburg-Gotha and of Edinburgh
HGDH The Duke of Saxe-Couburg-Gotha and of Edinburgh

I'm sure he was HRH.

So HGDH is below a HRH?  I am correct in guessing it was used for children of Grand Dukes who were not also HRH's?

Yes, it was used (for example) for Grand Duke Ludwig and Princess Alice's children, as far as I know. The Grand Duke/Duchess were HRH, while the Grand Duke's children and siblings were HGDH.

As an aside, has it been noted that when Prince Alfred was a young man in the Royal Navy visiting Australia he was shot by an Irishman? The Prince fell to the ground calling out'I am shot in the back and shall die'.However he recovered and the irishman was hung.

Yes that's true. And the Royal Prince Alfred Hospital was named after him, which is one of the biggest hospitals in Australia.

Regarding the shooting, here's the wikipedia entry:

"On March 12, 1868, on his second visit to Sydney while picnicking in the beachfront suburb of Clontarf, he was wounded in the back by a revolver fired by Henry James O'Farrell. The Prince was shot just to the right of his spine, and was tended for the next two weeks by six Florence Nightingale trained nurses led by Matron Lucy Osburn who were newly arrived in Australia (February 1868). On the evening of 23 March 1868, the most influential people of Sydney voted for a memorial building to be erected, “to raise a permanent and substantial monument in testimony of the heartfelt gratitude of the community at the recovery of HRH”. This led to a public conscription which paid for the Royal Prince Alfred Hospital's construction. Prince Alfred soon recovered from his injury and was able to resume command of his ship and return home in early April 1868. Henry James O'Farrell was arrested at the scene, quickly tried, convicted and hanged on 21 April 1868." This was despite Prince Alfred's attempts to intercede to save his would-be killer, and his questionable state of mind.

I believe O'Farrell was a Fenian. He is the first recorded man in Australia's history to attempt a political assassination.  Immediately before the attempt he had been released from a mental asylum. "O'Farrell first claimed, falsely, to be under orders from the Fenian Brotherhood though he was violently anti-British and anti-Royalist, he denied being a Fenian." (wikipedia)

Here's a link to the story of the assassination attempt:

O'Farrell was a Fenian, yes.  They certainly wasted no time in disposing of him after he was found guilty, did they?  These days he'd probably get a "community-based order" and the court would be subjected to days of evidence about his "dysfunctional" family background.  O, how times have changed!  ::) ;)
